Savoury Impossible Pie

Wow last week has gone so fast my boys are back at school tomorrow after 3 weeks school holidays.

Late Thursday evening my man hurt his back getting the rubbish ready to go out. He has been in bed flat of his back since so I thought I better get a jump start on things as Monday will be busy.

So we will be having Savoury Impossible Pie.
So easy and quick.
1/3 cup (50g) plain flour
1.5 cups (375mls) milk
3 eggs
2 bacon rashers chopped
3 green onions chopped
1 cup (125g) grated cheddar cheese
130g can corn kernels rinsed and drained
2 tablespoons parsley chopped

(This time I left the corn out as I didn’t have any and added chopped carrots and some chopped beans)

Oil shallow dish. Whisk flour and milk in medium bowl until smooth, whisk in eggs. Stir in remaining ingredients, pour mixture into prepared dish. Bake in moderately slow oven about 1 hour or until set.

Serves 4 to 6
